Pancake day, known as Shrove Tuesday, is the last day before Lent when people could fill up their tummies with fatty, sweet and rich food. And it happens to be this Tuesday!
It is a perfect excuse to invite friends for a tasty afternoon tea. After mixing up essential ingredients for the perfect pancakes pastry, all you need is to figure out what toppings you will add to your crêpes.
Sweet pancakes
You will need:
- 1 cup of self-raising flour
- 2 table spoons of sugar
- 0.5 table spoon of salt
- 1 cup of milk
- 2 spoons of sunflower oil
- 1 egg
- A bit of butter
Method:
- Mix egg with sugar and salt. Then add milk, sunflower oil and self-raising flower. Mix till the texture will be smooth and without any little bits.
- Heat up the pan and add a bit of butter. Put a spoon of pastry into the pan and cook each side of a pancake for about one minute.
- For a topping you can use Nutella, fresh berries or honey.
Meaty pancakes
You will need:
- 2 eggs
- 0.5 litres of milk
- 250g of plain flour
- 300g of cooked mince
- 1 onion
- Some oil for cooking
- A pinch of salt
Method:
- Mix eggs with a bit of milk, flour, a spoon of oil and a pinch of salt for a pastry. Then add the rest of the milk and mix. The pastry should be quite liquidy.
- Heat the pan and add a bit of oil. Then add a spoon of pastry so it covers the whole pan with a thin layer of a mixture. Cook each side of a pancake and set all of them aside.
- For a filling you will need to mix cooked mince with a chopped onion and some spices of your own choice.
- Fill each pancake with mince and roll it. Then cook all pancakes in a pan. Each side of a pancake should get a golden color.
Pancakes with spinach and cheese
You will need:
- 100g spinach
- 1 onion
- 3 little bit of garlic
- oil for cooking
- salt
- pepper
- 300g of cheese
- 100g of double cream
- 100g of baby spinach
Method:
- You will need to make the same pancakes as the ones for the meaty version. While the pancakes are cooling down, prepare filling.
- Chop the onion and garlic. Put them in a heated pan with a bit of oil and cook for few minutes.
- Add chopped spinach and mix them with garlic and onion. You can also add some spices.
- Chop cheese into tiny squares and put it in a separate bowl. Add spinach and mix everything.
- Add a spoon of filling to each pancake, roll it and cook each side of it in a heated pan.
- For a sauce you need to cook rest of the spinach with double cream.
