Vegan market inspires easy-at-home vegan dishes

The recently held vegan market in Kingston town centre featured local vegan and eco-conscious small businesses who showcased their delicacies for local residents.

The event was the second vegan market hosted by Ethical Vegan Events since October last year, offering a wide range of cuisines from American hotdogs to Caribbean salads to Italian desserts.

For those who missed the market or were inspired by what they saw there, here are some simple vegan recipes to make at home in under 20 minutes.

American Hotdog

An easy one. Toast a slice of baguette, or any bread of choice. Lightly sear vegan hotdog, add chopped onions, gherkins and coleslaw. Topped with sweet BBQ sauce and mustard then enjoy.

Vegan Dulce de Leche

Heat up one can of coconut milk and one can of coconut cream in a saucepan. Gradually add in 1.5 cups of brown sugar on high heat until it boils. Let it simmer for 15-20 minutes and remove from heat once it thickens. Cool and pour into jars then refrigerate until use. Serve with vegan ice cream or use as cake fillings. 

Creamy Tomato Soup with Garlic Bread

Preheat oven to 200 degrees. Cut the top off of a whole garlic and drizzle with a dash of olive oil. Bake it in the oven for 15-20 minutes. Roast chopped up onions and tomatoes until slightly browned. Squeeze half of the garlic and roasted vegetables into a blender adding stock until creamy. Spread the other half of the garlic on any toasted bread of your choice. Dip the garlic bread into your creamy tomato soup and enjoy an excellent and filling meal.
